here's a good tip when makin gravy from the turkey
drippins. pour drippins into a small sauce pan,
then add a cup of really cold water. it will
solidify the fat so you can easily remove it
before preparing the gravy.
am hungry all ready :)

Also use corn starch instead of flour to thicken gravy. No lumps.

Another tip. Don't buy a frozen turkey today and expect to safely thaw it by tomorrow a.m. According to the experts, you need 24 hours for every 4 pounds of turkey to thaw in fridge.

What happen to the good ole days of thawing your bird in a sink or tub full of cold water? I've never been sick from it and neither has my family.

Also, too late for tomorrow, but I would like to try soaking the turkey in a brine sometime. I just so happen to have an extra turkey. Has anyone ever done this? If so, would you recommend it?

Someone sent me this recipe.

Two Cups Kosher Salt
Two cups Wild Turkey
About a cup of Sugar or a half a cup of the dark Karo Syrup.

Don't forget to throw a bit of the salt directly INSIDE the Turkey.

Then submerge the turkey in water and the other ingredients in a large container and KEEP COOL for more than 24 hours. Like in spare fridge.

Then roast the turkey how you normal would...

HAhah.

Wow...Someone is bored!

I've been deep frying the turkey for the past few T-Givins'.

If anyone has never had a deep fried turkey..
YOU DON'T KNOW WHAT YOU ARE MISSING MY FRIENDS!

We inject marinade, and let it sit overnight. Cook at 350 degrees for about an hour on a 12 to 14lb. bird in peanut oil.

Mmmm GOOD!

H.
