I am going to replace the floor in my boat. I have the plywood and plan on using epoxy resin and a single layer of 10 oz woven matt. Does that sound right?

Make sure you use a layer of roving around the perimeter of the floor/sides/transom/bow joint at least 6 inches up and out all the way around. Also make sure you lay some strips of resin soaked mat on the stringer tops and lay the floor panels while those strips are still wet. Screw the floor panels to the stingers with stainless screws about every six inches. The floor is a vital structural component as it ties the boat together and prevents hull twist as well as distributing drive forces from the motor along with the stringers. Good luck... I assume the mat you have is epoxy specific, sewn around the edge with no bonding agent holding it together or is it actually roving or cloth?
