I am very new to this and have recieved so much info from this site, so thank you for that. I am replacing the transom on a 1986 rinker v180 and I am about ready to start the rebuild process. I can not find any info in if it would be a good idea to use 1 piece of 1.5" plywood or not. Eveything says to get 2 pieces of .75" and laminate them together, so I can assume there is a reason for that. Can anyone tell me that reason? Thank you.

I think the biggest reason is that 1.5" thick exterior plywood is not all that common and probably costs an arm and a leg, if you can even find it (or special order it). You can find three-quarter exterior plywood all over the place and it's usually not too expensive. I don't think I've ever seen 1.5" plywood.

^^^ Agree, use 2 layers of 3/4
After bonding the 2 layers together, and bonding to the hull, then layers of glas over the top, will give you the required 2 inch +/- a tad

No such thing as 1 1/2 inch exterior grade plywood
3/4 doubled up is the way to go.

What power plant and outdrive do you have. Different Power Trains required different final specs for your transom build. Usually 2- 2 1/4" You fiberglass laminations will only add about 1/8" in thickness. I'd consider using 2 3/4 layers with a 1/4" layer sandwiched in the middle. Reason...Plywood thickness today is 23/32 and 7/32. so to get where you need to be this is the way to go.
