I just got a used 85 Bayliner Capri with a Volvo AQ 125 2.1L motor and a Volvo 270 outdrive. When I popped off the cushion lid over the motor, I noticed a decent amount of water sitting in the bottom of the compartment. Now I'm not a complete idiot, but it doesn't seem as if there should be standing water a few inches below the brand new shiny starter. Searched some different posts on here but not sure where to start. I know the boat was put in the water 2 weeks ago by the old owner, but since then it has been high and dry.

Drain the water, then put the boat back in the water and start looking for leaks. You may have to run the engine to find it. But looking for and finding is the only way you are ever going to find out what, where, and why it's getting water in bilge.
You also need to get into the habit of putting the boat in the water and checking the bilge for leaks, smelling for fuel leaks, checking the oil, antifreeze, etc. Just to make sure everything is ok, and also make sure your bilge pump works and has a working automatic float switch. It also wouldn't hurt to have a look during and after your trips until you are more used to the boat and what it does.
The water could also be rain water. On land (trailer) you should have the drain plug out and bow high. Just to keep the bilge empty.
