Yes, it's possible. You can unbolt the engine from the flywheel cover and remove it. As mentioned in the thread above, you'll need to be aware of the water inlets and either plug them off or get the hoses higher than the water line.
But you should also be looking at the overall condition of all the drive components. There are seals and bearings in the flywheel cover that should be changed periodically, or at least checked for proper lubrication. If there have been any problems with the bellows, these bearings could be shot. Boat needs to be out of the water to perform that maintenance.
Bottom line, yes, it can be done, but you would eliminate a lot of other potential problems by doing it with the boat out of the water.
