VP 5.7 gsi - Temperature Rising

Hello All and happy 4th.
I have a 2000 Seaswirl Striper 2600 with a VP 5.7. I just changed the engine oil and filter, outdrive oil, fuel filters and took out the boat. Noticed that as soon as I hit 3500 rpm, the temp shot up to 250f. Dropped rpm and temp dropped. Took boat out and changed the impeller. Took out the boat today and noticed again that I hit 3500 rpm the temp climbs but at a slower pace than before. I also noticed exhaust / smoke coming out of the outdrive.
Thinking of changing the thermostat just in case but not sure what else can be the issue.
Any help or direction will be greatly appreciated.

VP so you have a crank driven water pump, correct?

Have a serial number?

Are their any grooves on the wear plate or pump housing?

When you say grooves on the wear plate, where would I see this? Do I need to take off the pump?
By the way, I am fairly a newbie. Lol

Look in the pump housing with impeller removed and do you see any wear marks?

Verify the raw water fitting on the drive isn't damaged

Left the boat. I will check tomorrow. I will also confirm the serial number

Update post: I pulled the water out of the water since I have it dry docked. All looked ok with housing but when I was flushing the engine, noticed quite a bit of exhaust coming out of the outdrive. Thinking I need to take it to a shop for diagnostic and then see.
Unless someone here has any ideas or troubleshooting fixes.
