Want to update my dashboard

I removed the ever-so-imprecise speedo, and replaced it with a much more useful FloScan last weekend, but the FloScan used a smaller hole. I used some Plexiglas screwed to the metal (SS?) console, with the desire to replace the dashbord with something more modern. Now I can't decide what to change it with. I've been thinking about 1/2" Starboard in black, or smoked lexan. I also thought about 1/4" white starboard with a clear or smoked lexan over it. The boat is 26 years old, and is the tan color from the mid-80's. I don't think white would look good, and would get dirty too quickly. Any ideas?

h, and yes, that's c. 1980's cut pile carpet you see. PO used it for a non-slip surface, and oddly, it works pretty well, just ugly.

And while I have you, how would you go about refinishing the black steering wheel 'collar'?

Starboard would work. I am actually using PVC trim board for mine. Black may be better so there is not such a big color difference. I know it is very easy to spot an aftermarket dash job done in the wrong color white. You could though paint the dash to resemble the rest of your boat. For the steering collar. I would wet sand with 400 girt, use a self-etching primer, and then spray it with black enamel.
