I need to change out my water impeller, have done it on my 6hp so I'm kinda familar but with the jet I'm not sure wether I have to take the shoe and the impeller off to unbolt the jet kit, because as of right now the impeller will not come off so hoping to save a trip down to the local outboard shop if changing out the water impeller doesn't require dropping the jet impeller.
I know I know read get a manual well I have one but as of right now its MIA, so I have searched the forum but havent found exactly what I'm looking for.

Yes, you need to lower the whole jet pump unit to get to the water pump.

Removing the jet unit is pretty much like removing a regular lower unit, except it's easier because the gear shift connection is external, you don't need to mess with the shift arm up near the engine block.

As ondarvr said, you do not have to remove the shoe and the jet impeller, just remove the whole thing. Good luck.
