water in bilge - engine stalls

i have 1998 sundancer 250 w/a 7.4L mercruiser. when on the lift w/ only the engine water intake in the water the engine runs smooth. when i lower the boat all the way into the water the engine stalls and the bilge takes on water.
this started last week after running at on plane from destin to pensacola, when i slowed for a no wake the engine stalled and was difficult to keep running even at WOT. any ideas?

Where is the water coming in at? Is it getting on the engine?

i cannot tell but, i did note the engine ran much hotter when boat lowered into water and bilge takes water. i was almost thinking the additional pressure of the engine intake and output of water was causing some type of back pressure.
