Plan on replacing the water pump and thermostats just as a prevenative maintenance. Is this something fairly easy or is it best to take it in and have a shop do? I know it hasn't been replaced in at least 3 years.

I hate these kinds of questions. In order for anyone to be able to really answer you we'll need to know what other tasks you're capable or comfortable with.

For someone like DHadley, it'd be a snap. For someone who doesn't know a box-end wrench from a garden rake it'd be next to impossible. I'm fairly confident you're someplace between those two extremes.

What else have you done - cars, carpentry, whatever?

Re: water pump replacement

iboats sells some great kits for doing this. I just ordered one for my Yamaha. This is a very straightforward do it yourself repair. If you intend to do some of this work, you may want to order a manual as well. It will pay for itself real quick! Essentially, I drain the gear case lube, cause I like to change mine often, undo the bolts holding the foot to the motor body and check the anode, fin bolt. There may be one under a plastic plug holding that part of the foot to the motor. You will be staring at the water pump at the top of the foot. The kit will probably include new gaskets as well as new bolts/screws. After replacement, refill lower unit with lube. By the way, it sounds weird but with both screws out, it fills from the bottom, forcing the tip into the lower drain hole and the oil will come out the top when full.Good luck!

I have a manual and used it to rebuild the carbs myself. Started right up after that and runs great. So if its not to much more complicated then that I might be able to do it.

Probably easier than the carb rebuild.

Should be well within your abilities.
