I understand what that the black one is where the drain plugs goes but what is the red and the blue one? and why does the red one have the mesh thing over it?

red, water intake for livewell. Mesh keeps out weeds and floating debris.
Blue livewell overflow.

Note that with that design (I have one) you can't fill the livewell while running and you might drain it depending on drain set up. I'd suggest plugging them, too, if you don't use the livewell as such and you keep the boat moored.
