What engine temp for 5.7?

I am trying to find out what the engine temp should be on my 2001 5.7. In the manual it says the thermostat should open at 160 deg. so I assume the engine temp would be a little higher. I have just had a new raw water pump, thermostat and housing fitted and the engine temp sits between 170 - 180 deg. I am just curious if this is correct.

They usually run in the 170? to 175? range if raw water cooled. When you get to 180? something is happening. Could be the exhaust is starting to plug up. Especially if you boat in salt water.
If you have a closed cooling system, 175? to 180? would be quite normal.

my 5.0L runs at 160 all day long sometimes 165 but not usually.

Thanks for the replies, my boat is raw water cooled and in salt water. Most of the time it sits about 175 deg. if I idle it along for a prolonged time the temp will climb to 180 but will drop again as if the thermostat is opening. As I mentioned it has just come out of the workshop where a new thermostat was fitted. Prior to that the temp was showing around 140 deg. so I am assuming it had an incorrect thermostat. I must say the engine seems cooler now with higher temp gauge readings than before and I can quite comfortably put my hand on the risers.
