1987 force 50hp. for some reason it randomly cuts to idle at WOT. it can be running strong for 5 minutes and it will just drop down to idle until we move the throttle back (barely) and then it picks back up.

any ideas as to what might cause that?

Try pumping the bulb when it cuts out and see if it picks up. My 10 did the same thing and it was a leak at the tank (fitting loose) causing the line to suck air. It would run fine for quite a while and then all of a sudden it would act like I pulled the throttle back. It would stay running but it was like it was just above idle. Make sure someone is behind the wheel and the person priming the bulb is secure. The motor may surge on you when you pump the bulb.

my 75hp force did the same thing and i had to replace the bulb i had no leak anywhere but the check valve in the bulb was bad. as already said as it starts to die pump the bulb and see if it picks back up if so could be a air leak cheack all clamps for tightness, replace the bulb.
