looking for info on winterizing 115 optimax that stays on the boat tilted up in the sea water all winter . It has been flushed with fleshwater but I now don't think that, that was such a good idea to flush with freshwater then leave sit?

Bad idea. Tilt it down in the water or pull it out, make sure your anodes are good!

What if I was to put the engine down and drian the fresh water out, re tilt and leave it. Taking it out of the water is not an option. By doing this the fresh should have drained leaving only the salt in the bottom end after it's re tilted.

I dont know the winter temperature at your place, but salt water will also freeze if it is cold enough. And the rain will mix with the salt water making it freeze easier. I think that if you must have the boat in the water, it will be best to have her tilted down.
And check your anodes regularly!!
