Is your new wooden console going to made to see the wood grin, or not? Because if you are building the console to just made a console for gauges and such, I would apply some polyester resin and CSM (chopped Strand Matt) fiberglass to make it waterproof. And then you can use whatever type paint you like. Most use Rustoleum type paint with a catalyst hardener (Majic sold at tractor supply) added. And that makes it sealed and fuel proof and shiny at the same time.
