Yamaha 115 cuts out @ 1/2 to 3/4 throttle

I have a 2000 Yamaha, 115 hp pushing a Polar 1900 bayboat in SW Florida. My problem is while running at 1/2 to 3/4 throttle (3500 to 5000 rpm) for 5 to 20 minutes, I get an "overheat alarm" and my engines shuts down to idle speed (prop engaged) for 10 to 60 seconds.

I keep the throttle engaged to just spin the prop and "putt" until the alarm is silent. I can then push throttle and go as fast as I want, until the alrm sounds again, I putt, alarm silences and throttle up again. Water stream out of the engine is strong and not "hot to the touch".

This is not a continuous problem. Some days it can happen every 5 minutes (very frustrating) and some days only once or twice. Water temp, 60 in winter to 90 degrees in summer does not matter, it still happens.

I just replaced my water pump, lower unit grease, thermostats and it still happens. A mechanic told me it was "back water fug" and explained to me there is now a "coating" of "fug" on the inner walls of the water jacket and this acts as an insulator. He says the only way to fix the issue is to tear down the motor, clean the water jacket and rebuild. But, he also says it will happen agian once the "coating" gets built back up. Sounds a little hokey, but I am not an outboard mechanic.

Any help out there? Suggestions?
