I’m looking at buying a used stingray with a mercruiser 4.3 MPI. The only question I have is at WOT the water temp will increase to what I believe 190ish, any other time running the boat it will run a hair above 175. I’m also curious about when the guardian audible alarm would trigger for a high temp alarm.

Being an EC motor there isn't many that can answer the question, mostly because its so new, and not much info out there.

Best chance is either muc or Fun Times may have some insight

For this old guy, I would stay far clear of any motor which uses CAT's, they just have way to many sensors and its to new a design. So many have posted with many problems

Good luck

All of these guys will need a motor serial number to even begin answering questions

Would this not be the last of the gm 4.3 mpi ?

Regardless. I’d maybe just say that the ecu guardian will be measuring true temperature. The gauge (if like a faria analogue type) can and usually will be not accurate. My faria gauge shows a 10o difference to the true smartcraft reading most times.
