Thats funny. So if all goes well and I am able to source this complete turn key swap, I am assuming it is pretty straight forward to pull the whole unit out and put the new one back? I have done this in cars and trucks many times. Just not a boat.
If you get a long block or even easier complete bobtail yes easy swap easier than car or truck just need to lift it higher than a typical engine hoist . Chain fall off a high beam forklift etc.

Most likely going to go with the 5.7 bob tail.
this would be a good choice if u have an alpha drive

if u have a bravo

i bought a partial engine from them swapping a 4.3 for a 5.0, id consider that or a base engine as you sound reasonably competent and other components seem ok. I spent a couple evenings mix and match parts off my 4.3 bought some new items like exhaust, ignition module , some cooling hoses ( intake, TBV distributor and edlebrock carb came with partial engine), set up has been great for last five seasons . Its not rocket surgery, set it up to merc specs and it will work well.

Engine pulls in a boat are fairly easy IMO, having done just one though . . .

Remove outdrive
Remove the 2 rear bolts holding the engine at the transom assembly
Remove bolts on front mounts
Disconnect . . . fuel line, water intake hose, cable harness, power & ground wire at starter and flywheel, shift mechanism, exhaust, and maybe a few other odds & ends . . .

Bring in the sky hook (or chain hoist if the sky hook is busy that day)

Rule 1. First thing you do, remove the drive.
Rule 2. See rule 1.

For a video on removing the drive, see my vidoes list (if you're on a phone, flip it landscape to see my forum signature, which has a link to my videos. It's called 'My Videos'.)

I ordered the 5.7 gold series from Michigan Motorz. They no longer carry the 357 mag complete turn key. I will have to swap a few accessories but nothing major. Thank you for all the help and input. I appreciate it.

One thing I wish I had done when I did mine is put a remote oil filter on it. I think its like $200 to mount it up on the manifold vs under the engine.

also suggest a remote oil drain hose with the garboard plug on a swivel.

I did both of these things. Still not trivial to get the hose out through the plug, but much easier/faster/more complete than sucking it up, and the filter would have been damn near impossible to get at. Super cheap and easy to do with the motor out.

Ok. So the gold series 5.7 from Michigan Motorz is in. We installed it at my friend's shop using a chain hoist and we also had a forklift to move the engine into place to connect to the hoist. All in all it went well. I ran it on the hose and all seems fine so far. All my gauges are reading fine. I am going to get it in the water this week. I do need to wire the neutral shift interrupt switch in. Is that just a power and a ground? There are power and ground leads on the new harness in that location that I can use.

Shift interrupt is from negative coil through switch to ground. No power.

How do I get to the negative wire on the coil? The new engine is a vortec and doesn't have the older round style coil that the original engine had

Nvm, this might not apply depending on your ignition system. Do you have a Delco, tb 5, other?

Their silver and gold series partials come with delco est . Not sure what universal wiring harness the gold comes with ?

Here is the wiring digram for delco EST with shift intterupt on a electric fuel pump engine. I belive vs the original merc thunderbolt this supplie a momentary 12 v + to the EST module vs grounding the negative side of coil
