Dino oil is fine. Synthetic oil is fine. Just make sure the oil has sufficient zinc and is of the proper viscosity and all will be fine. Synth oil will not cause your seals to leak, etc.
When I reassembled and tested my boat after restoration, I found a leak and it was exactly as you describe. It was tricky because the water ran down the Y-pipe. It took a bit of searching to find it was leaking from the rubber boots on the elbows.
Exterior grade plywood is fine. If you need something thicker than what your local store carries, you can laminate sheets together using Titebond III any kind of exterior-rated construction adhesive (e.g., PL Premium).
