I bought an axle a few years ago and it it had Rockwell Posi-Lube hubs.
These have an offset zerk and they have channels for the grease to flow through so there is not a cavity that needs to be filled.
I like them better than other types I've had.
Fan should be very hard to turn when hot.
Compressor probably won't cycle when it's hot out especially at idle.
Like others I'd try the fan clutch. Cheap and easy.
I don't know about conversions for Suburbans but do you have the full fan shroud installed?
Also, you should be able to check the fan clutch.
With the motor hot and the engine off try and turn the fan.
It should not slip if the viscous coupling is working properly.
