what difference would see if I took of my 14 11p prop and put on 14 13p prop

Your RPMs will drop, that's all that can be determined from the info provided.

​If we knew the type of boat, your current RPMs at WOT and speed, then a more accurate answer can be had.

I'm going to guess you're working on a pontoon boat, so assuming that, the biggest thing you'll see is a difference in the tachometer reading. If the 11" prop is turning at the very top of the engine's rated rpm, my GUESS would be the 13" will bring that down to the bottom of Merc's suggested max rpm. Something on the order of 500-1000 rpm lower than what you are turning now. 5mph or less difference in speed (faster), with less pulling power.
