I believe, good friend, that you have been advised to round file the temp gauge and rely on the pressure gauge. There's good reason for that.
As I posted above, you're managing the cooling of one hellish fire, and with a relatively primitive one pass cooling system under a variety of conditions. The temp will vary quite widely and still be perfectly normal. Water pressure, however, runs a certain pattern, and early warning of the pattern changing is your best bet to avoid an overheat. Should you miss the clues and the cooling fail to the point of making steam, the overheat alarm will warn you in time to prevent damage.
The best thing you can do is put a louder horn on the overheat alarm.

thanks for all the replies. However I am still trying to determine if the engine is running hot or not.
Dose not hit the over heat alarm.
appears to be running less than 175 degrees.
