Those needles are regulating air being drawn in, the optimal air to fuel ratio for most efficient combustion is when the rpm is at the highest then slightly open to the rich, a little rich is better than too lean. Rich doesn't nesecarily mean more fuel in it just means more unburnt fuel out. More fuel needs more air and vise versa, so your essentialy adjusting the air to the amount of fuel.
Thats way too much chatter but hope it makes sense.
Also there is no way your engine should still running when the needles are seated, if it does than you have an air leak somewhere like the carb base gasket intake manifold or throttle shaft bushings, that is if the needles themselves don't have broken tips.

Eliminator, thank you. That makes more sense to me than anything else! That helps to explain why I think I have it set perfectly, then close the door in the hood, and the rpm's drop substantially. It's getting less air, and as such, it's getting a richer fuel ratio.. So, hopefully, I can find the sweet spot in between and have it run as it should.. I've been out twice since I first posted, and both times I have adjusted, and readjusted, and I think I might be on to the right spot now!!!! But now I know what it is that I am doing when I'm adjusting the slow speed needles. I was thinking backwards, assuming that the adjustment adds or restricts fuel to the carbs!!

When the seats are closed the engine does indeed starve, and sputter out. The one night I was turning the needles in, it started revving up, and ran so high, I cut the power and it still continued to run!! I finally choked the engine so it stalled, but I couldn't figure out what caused that, and have tried in vain to prevent that from happening again, so, I have been leery about adjusting the needles too far since then!!!

If you close the door and it slows down the air intake openings on the bottom engine cover might be obstructed or the exhaust seal is leaking. If it sucks exhaust there's less oxygen to burn.

Can you take some pictures of your carb linkage at the carb and pics of your link arm and distributor position when throttle is pulled to the idle position? I think you may be able to get the whole works in one well placed camera shot.
That bit about the engine running out of control is very interesting.

Boater,

Which exhaust seal in question?? Are you talking about the exhaust cover on the back side of the motor beneath the t stat box? Or are you talking about the rubber ring between the outside case and l/u? Both would seem to explain to me..

The accordian tube for the exhaust relief port must be sealed or exhaust will leak into the cavity between the exhaust tube and the outer covers. Also the inner cover on the port side for the shift rod or wires must be sealed with a gasket
