Normal running temp is about 130-140, sometimes lower. Shouldn't exceed 160F. A temp gun is great to have for testing (lots of other uses too, around the house and shop).
The barrels most of us come up with are a far cry from professional test tanks, and the danger is usually overheating (exhaust heats the water in the barrel, and there is sometimes a tendency to run with too little water). Additionally, you shouldn't run at much more than a high idle, particularly a fairly large motor in a small barrel.
Assuming you don't run it balls to the wall, you probably will get up to operating temp in a barrel but not exceed it (heel of the hand on the top of the cylinder head is the standard test, like you were doing.) Thing is, you probably won't get up to a good sustained temp in the barrel, so you will get a little more exhaust nastiness. Additionally, you will not get the effect of the prop and converging ring clearing out the exhaust -- need to get out on the lake for that too.
I would replace the pump diaphragm like Racerone suggests, then just get out and run it some -- don't have to run the bejeebers out of it to clear it, just some steady running.
