3.0 Mercruiser Carb Troubles

I have a 1991 3.0 Mercruiser. I just got the boat and have no history for it. It starts up right away when cold and as the automatic chock pulls back it starts to die. It seemed like it might be flooding so I pulled the carb and rebuilt it with the new style spring loaded needle and seat, float etc. and adjusted the float as per Merc service bulletin. http://www.marineengine.com/discus/messages/12486/97_08-84745.pdf
I was expecting this to solve the problem. It did not.
The idle mixture screw is supposed to be about 1 1/4 turns out. It needs to be 3 1/4 turns out to idle the engine (that's where it was set before the rebuild also). And when you give it throttle the fuel shot from the excellerator pump stalls it.
I cleaned the carb with air when I had it apart and all the passageways seemed to be clear but I did not pull the jets etc.
Anyway, I am at a loss as to where to go from here any help would be appreciated.

Did you soak it in carb cleaner before blowing out the passages? Why didn't you remove the jets, got to get carb cleaner and a way to get the junk out of them.

Yes, I wasn't as thorough as I ought to have been. Guess I thought I knew what was wrong. I am going to pull it and strip it right down.
If the idle needle needs to be that far out I guess it is actually producing a lean idle not flooding condition?

Don, thanks for the rebuke. I stripped it down again, soaked all the components and blew it out. Well what'ya know, it started and idled like it should...with the idle needle at 1 1/4 turns out like it is meant to be.
However, it bogs on quick acceleration. There is a nice strong blast of fuel from the excellerator pump into both barrels but it almost completely stalls it out. I tried both leaning and enriching idle with no improvement.
Where might one go from here? I am an outboard guy and this is a new experience for me.
