What you are talking about doing is going to entail modifying something. You will not find a service manual for each step of the process. If you are not comfortable doing some basic changes and modifications - like adding an electric fuel pump / wiring / oil pressure switch - then you might be better off buying a complete bobtail engine from Mercruiser. You can eliminate any guesswork from what you currently have. It will come with new manifolds and risers. It is a "plug and play" type of set up.
Expensive? Yes. But it sounds like that may be your better option.
