4.3 Cuts Out at 3,000 RPM????

I just finished redoing a 4.3 MerCruiser I/O on a 1990 Chaparral, took it out friday for the first break in run and it did great. Took it out Sunday and run it for 1 1/2 hours and it ram great again then it started. Would not run above 3 grand without shutting down completely, It had a full tank of gas and nopw it has 3/4 of a tank. I ran it on the muffs in the drive way just a little bit ago and it runs fine. Now this is my first boat but not new to engine at all, what would be some areas I need to look at since it only did this while under load ???

Hello I do not have an answer for you but as soon as i find out what is wrong with my 4.3 i will let you no. I just got done rebuilding it and took it to the water and ran it for a half hour at the dock just above idle so the water would be pumped up and it ran fine so then i took it out and as soon as i took it up on plain and ran for a min maybe and it cut out and then was hard to start so then i tried again and as soon as it started to cut out i backed out of it she ran fine so im thinking on the lines of fuel filter in carb or a bad coil ,but i think we are haveing the same issues.
