Bayliner hesitation issue.

Last summer I was following my friend in his boat when I hit one of his wakes really hard, for some reason the rest of the day it would hesitate and struggle to get to speed. This was the last time I took the boat out for the year. I will be taking the boat out of storage in the next few days to diagnose this issue to get it ready for spring.
The carburetor was rebuilt a few trips before the incident running an electric fuel pump. "2 months new prior to the issue" distributor/cap/rotor, New spark plugs and head gasket. The boat is a 1987 2.3L Bayliner. Let me know if any more info would help

Ayuh,..... Water in the Fuel comes to mind....

That would only matter during the movement of the throttle. Once the throttle is in its set position the acceleratior pump doesn' pump any more fuel.

My vote is with junk/water in the fuel tank and the filters got a big gulp after the wave hit and the tank got jostled.
