Ive been doing them a while.Have good results w Spice Hunter brand Grill Shakers chicken seasoning.Recently used Webbers Beer Can Chicken seasoning.I just washed young fryer and patted dry, applied generous amount inside, under the skin @ breast.and outside.no oil.I use toothpicks to pull skin over neck to seal the whole in the bird.I 1/2+/- filled beer can w Newcastle Brown Ale and more BCC sesoning.A jumbo Webber newspaper chimney starter full to the top w kingsford Hickory and Competition charcoal mixed.Hot coals in 2 Webber baskets on both sides of Web.Kettle grill (Have to push the 4+ lb bird down on the canholder or it will hit the lid).I added 1/2" Newcastle/white wine to a piepan the Chicken cooks in after its on the grill, 4 1/4" slices of lemon, and some more BCC seasoning.A good handfull of apple wood chips soaked 1/2hr.in the Newcastle go in an Iron box on breast side of the 2 coal holders.vents 2/3 closed, after 2 hrs I opened it,removed chikn and moved the two coal holders to the center.added some white wine to the almost dry pie pan after puttin it back on the coals and lid back on for 15 mins.Rested 10 mins.IT WAS BEYOND GOOD.My wife and I almost ate the whole bird!we agreed It was my personal best BCC.Now if i can just repeat it.

I have found that beer has little effect....coca-cola does much better than beer since the sugars caramelise onto the surface of the chicken. I put the beer to good use though. While grilling I use the beer for a thirst quencher and fire extinguisher.

Beer??? Fire extinguisher??? Shame on you!!! Thats truly alcohol abuse.
The only time beer should be put to use as a fire extinguisher is when you have to pee (not on the grill though)
Remember the movie Strange Brew???

I usually shove half or quarter potato in the neck hole to seal it up.

I use a potato or an onion trimmed to plug up the neck too.

Of all the BBQ rubs I make myself for beer can chicken I like the weber BBQ rub they used to sell, when it started to get scarce I bought 9 big bottles at sams club, but I'll look for this beer chicken rub you speak of and try it, but I'm having a hard time finding it in the big size, maybe they're dropping it like they did the BBQ rub I like.

You still can't beat the old agricultural fairgrounds method using nothing but vinegar, oil, texas pete, salt and tomato juice in a pump-up sprayer. Set grates on cement blocks about 18 inches from the CHARCOAL and SLOWLY grill chicken while repeatedly spraying this mixture on them. The AROMA will carry for a couple of hundred yards!!

If you've never tried Newcastle brown ale in the BCC can and pan it sits in, I encourage you to try it.It has a savory flavor that works well in lots of recipes for marinades BBQ sauces and such. Its a big difference than Pilsner or blond beers when used on BCC.Im looking forward to trying some of the many new local/regional beers.I also usually ad sliced onion and lemon to the pie pan liquid, and quartered onion on the coals for onion smoke flavor.I like BCC because you absolutly cannot burn it.you can overcook it but it will still be somewhat moist and delicious. And If you have company(cook more than one) you have all the time to socialize and enjoy their company,w/o having to constantly mess w the grilling or burning:eek: chicken.Play horseshoes, cards, etc,or just sit back and relax and your guests will be impressed w the fine eats.Ive also cooked very good BCC on gas grills, but I havent replaced my last one that I wore out yet.
