Bow eye hardware question

So I bought a new bow eye the other day to replace the old one with (post was nearly rusted down to nothing. I had to sheer it off to get the old one off, but it took almost no effort to sheer off the old bolt.

Anyway, when I opened up the packaging on the new bow eye, I was a little disappointed in the design. It's a common bow eye and is even carried on iboats (though I bought it from a local store here). The problem I see with it is this. The hardware (nut, bolt, and washer) on the new bow eye is made of galvanized steel. Although that will last for 20-30 years on the lakes I fish (it wouldn't last nearly that long on salt water), it will eventually rust out however. I would like something that will last for many generations though. So I'm thinking I can just replace that hardware with stainless steel. The bolt does unscrew from the bow eye.

So I'm wondering if anyone else has done this, and where a person could get stainless steel nuts bolts and washers to fit it.
