inject that little bad boy with your favorite cajun spice mixed in RED HOOK beer... makes for tasty goodness.

If you have a ROSS store nearby, they generally (out here anyhow) sell meat/flavor injector syringes for about $3-$5.


I generally soak wild birds in apple cider rather than brine them, and then they go for the smoker, but for a store bought bird, this method turns out awfully well.

Not worth the bother unless someone else is paying for it.
I recall using $25 in oil for a $18 turkey.

I cover the turkey with bacon strips, then foil and roast as normal.
Remove foil and let the bacon brown at the end.
No basting needed, comes out juicy.

And fried turkey just plain looks wrong.

It looks wonderful and taste's wonderful. :)

It is not economically feasible though. But who cares. :p

I think my favorite is smoking on the Weber grill though.
Cheap and SO good.

Reading these posts and looking at the related links has got my mouth watering:D. We just remodled the kitchen and the better half wants to do the traditional turkey in her new convection oven so fried is out this thanksgiving.

Thinking about doing an apple cider brined and smoked breast in a week or so. I haven't smoked anything big - just trout in the Little Chief. I'm guessing it's best to just smoke it at medium heat with apple chips for about an hour on the grill and then bring it up to temp in the oven :confused:

In any case, this is a good theread and has got me hungry :D:D

I'm a fan of fried turkey, but I'm a master of the "bacon wrap".
My wrapped molasses chicken is famous.:D

Bacon wrapped pork tenderloin is my new project.

Its doesn't make sense if you cook only one bird then toss the oil. I spend $35 for the oil, but I cook more than one turkey on Thanksgiving. Since the cooking time for your average 15-18 Lb bird is about an hour, you can do three birds in the time it takes to cook one in the oven. After you cook the turkey you can also filter the oil very easily and store in a cool place and reuse it for up to 4 months. At my house we love turkey, so at this time of year when they are at ultra-low prices we buy up 5 or 6 of them and store them in the deep-freeze. We can then have turkey whenever we please.

Use peanut oil
you can use it multible times with multible foods
it will not transfer food flavors
just strain after each use I have got 5 frys before I throw out

Just make sure none of your guests have an peanut allergy. We have to be careful since my wife and friends have some pretty severe food allergies.

Epi-pen always available...

I do the bacon wrap also( applewood preferred ).I wrap all the game I kill and grill/smoke .Rabbit,quail,pheasant, dove,chucker,turkey etc..It does add to the flavor and keeps it juicy !
