Given that it was so cold this past week, I decided to stay inside and make something hearty and filling. Shannon has always been a fan of French Onion Soup and always orders it when we go out......so I decided to give it a shot.

For the finish, I bought some french bread and toasted it.....making some big croutons for the soup. I topped it with some mozzerella cheeze.

It was VERY tasty.....and kept us toasty warm while it was -20F outside.

Is there any other way? LOL. I served it with the wine I used to make it with.

Tash, I do 100% of the cooking here. No kidding, my other half can't operate a coffee maker. Luckily my dad has shown me how to cook and enjoy cooking and expiramenting in the kitchen. He almost graduated from culinary school, but skipped his final semester to work in a factory. Now he is retired and spends almost every day making something in his kitchen.

It does sure look good.

Funny thing is that I do like onion soup, but otherwise can't stand cooked or caramelized onions.

i watch my Grand Mother, and the House Keeper cook growing up, learn the real country way to prepare good, economic foods. cheap cuts of meat are actually better that expensive, prepared correctly. you can beat a mix of collard, mustard, and turnip greens, with some fat back, slow cooked.

Great Job!! I can just smell and taste the mix of the mozzarella and onions, with the wine adding a kick to the overall aroma.....:D:D
And I too enjoy whipping together meals, deserts and breakfast. This morning it was SOS using ground sirloin and a side of fried green tomatoes for a little palate cleanser....fresh squeezed mix of orange and grapefruit juice. Ummm mmm, time to go raid the fridge!!

Ha, its not that bad. Its pretty tough to tell the difference between -1F and -20F. It got up into the 20's again for a few days.......now its down to the single digits and below zero again.......maybe I will make cream of chicken soup with wild rice this time.
