Getting Fiberglass Material

In rebuilding my boat stringers, transom and deck I see plenty of fiberglass listed on Ebay and other online stores.

What kind should I get? What sizes? They come in many sizes and shapes.

How many layers go on my stringers? Does this depend on the thickness of the glass? Will it bend around the stringer top or do I need a 3/4" strip for this?

How many layers to build my deck up to the previous 1/4"? Should I screw the deck to the stringers or use something like "peanut butter?" If I attach cleats to the hull what do I attach with?

Could I grind my existing stringer glass down to about 1/8" to use as a guide for the new ones?
Thanks.

Just a newb doing as much homework as I can before the finish job begins.
