GRRR!! here we go again

I just installed new water seperator and it went great. But when engine was running on muffs temp would vary greatly 120 then to 170 in a second. It kept flutuating like that for a few minutes so I looked and found no water from lower holes in gimble ring. But I did have water coming out exhaust but it was cold water. Should I pull lower drive off and replace impeller pump assembly? If seal is bad on top of that assembly will it leak oil also? mercruiser Alpha one generation 1

If the impeller is over 2 years old, yea, it needs to be replaced, but it may not be your problem.
First of all, the heat won't change from 120 to 170 in one second. if it is actually that short a time, then I would suspect something wrong with the gauge or sender. An IR temp gun aimed near the sender will tell you what the temp is actually doing.
