My youngest son gave me a Buck 119 one Christmas a long time ago. Too large for gutting and skinning imo, but perfect for separating ribs from the backbone, or any heavy cutting chore.

Hey Tim, I have always liked a drop point knife like you have. I will have to tell my wife I found a Christmas present she could get me....thanks for the link.

A sharp one is the only knife you need. As any knife will work but I am particular to the ones the Eskimos use don't know the name but work grate for gutting but excellent for skinning.

a good sized fixed blade with a gut hook,pick your favorite maker,i use a western set i got from buckmasters years ago,i cut from the throat to the tail with the gut hook then open the ribs up to cut the heart/lungs out without getting bloody to my elbows ,no cut guts with the hook,i will never be without 1 again,i have used my small swiss army knife with no problems but less mess the way i do it now,good luck this season,mike243

A bit off subject....
A buddy of mine guides elk hunts in Colorado. He told me that he dropped off one guy at a drop camp, and was to call when he got his elk so the guides could help skin, cut, and pack out the meat. He got a call two days after they dropped him off, and arrived to find the elk finely boned and ready for packing.
My buddy couldn't believe how well the meat was cut, and cleaned off the carcass. After a little bit of talking, they found out the gent was a surgeon and all he used to put up the elk was a scalpel......go figure.
