Later model 15 OMC Thermostat ?

On the newer style 2 cycle 15 hp, 1993 - 2005 ? I see the t-stat has changed to a multi parts design, I have always tested the older one piece t-stats by placing them in hot water to see if they open at the correct temp. I was wondering how do these new type stats work,? & if it is possible to test them ??, I laid the whole contraption on the work bench and would like to understand the basics of how the system functions. thanks

the best way to boil water and place in the termostat,and watch

as i remember in the midle is small pin, expendind in the lenght
