loss of power or steering issue

I have a 1986 bayline, seems to run fine going straight. If I try to turn with anything over 1/4 to 1/2 throt it sounds like my trim is to high and I loose 10mph or so. I'm a new boat owner so this is all new to me.
I know these things are not turning machines but it seems like I should be able to turn with a good ammount of throt.

There are so many variables it is almost impossible to answer your question. What do you consider a turn? 180 in a couple of hundred feet? This is a sharp turn and many boats will ventilate, the engine will rev, and the boat will lose speed if trim is not tucked all the way in. How high is the engine mounted on the transom? What prop is on it? Different brands will ventilate more or less. And on and on and on.

Well I talked to the old man I bought this from and he said the engine should be mounted in the factory location it was rebuilt about 5 years ago and pretty much sat ever since. When I turn it seems the rear end of the boat lifts up and I have noticed that the trim will not stay in the up position in the water. Could the motor be lifting in turns? Now if I have the boat out of the water the trim will stay up, I don't understand that part but I'm sure I will figure it out. The prop is a 3 blade and my turns are very very long. I have tried to watch the motor during a turn and don't see much movement. Also I can only get this girl to about 30mph according to gps and speedo.
