first off i would like to send out a big thanks to all service men and women active or not and my gratitude to out fallen brothers and sisters. though this weekend is full of cookouts and parties most do remember the meaning.

any smokers on iboats? today im smoking a pork loin and 3 fatties. for those who dont know fatties are 1lb chub of sausage rolled flat and stuffed with favorite stuffings and then covered with a bacon weve. HENCE the name FATTIE.

i have one stuffed with pizza sauce, motzeralla, pepperoni and itialian seasoning.

and mine is jalapeno popper. 6 sliced jalapenos, mushrooms, monterey jack chunks, chedder and motz shreds, and chedder sauce.

then they get rolled to cover up stuffings and then the bacon weve

the pork lion is on now. coated in a BBQ rub. smoking over charcoal and mesquite on a homeade 55gal drum smoker.

heck what am i thinking. someones probably got a smoker on thier boat. hahaha!

JB smokes, Carl. I have a Camerons stove top smoker.

Favorites are jerky, turkey tenders, chicken breasts and salmon. That's pretty much what my dietary restrictions allow.

nothing wrong with salmon and chicken. speaking of salmon. man its been a year or two since i had a slab of smoked salmon. good stuff.

oh and the bushes beans. they are great when you stick thm under pork or beef on a smoker. the drippings are fattening but the flavor is great. topped with bacon chunks.

Bad...!!! Catfish....you are sooooo bad making us hungry like that. If I lived closer to ya I would invite myself over to watch the 600 with you and taste those fatties :)

Yes I smoke. I usually smoke a few times a month. Pork ribs, Boston butts and now I think I will have to add fatties to my list :D I make my own dry rubs also and even make my own sauce. A southern vinegar mustard sauce....infact I smoked several slabs of ribs yesterday but I did not take pics....maybe next time.

my catfishcarl comes from my passion of catching catfish im a carl edwards fan (since jarrett retired) and his number 99. had been posting in force forum. hadent really introduced myself. p.s. first batch of smoked beans is done.

looks great! I used to have a big upright smoker w/ water pan underneath - heat up time was about an hour or two, chopped up fruit in pan to staem meat, pork butts were awesome! Don't have smoer anymore, there's a counter top smoker??? Hmm maybe time for one of those???

If you did that bacon weave on a salmon steak it would be fine I bet.

Hey catfish, if you have any left overs, I will get you my APO! Well, maybe not.Dont think it will arrive very edible with the long shipment and the 110 degree weather we are havin already! Sure does look tasty though! Will have to try that when I get back to Texas!

Hey Catfish,

I'm a fellow "smoker". I made a pulled pork (Boston Butt) on Sunday this past weekend with some of my homemade Chipotle BBQ sauce. It came out very very good!

I smoked a whole pork tenderloin on memorial day. Here is what part of it looked like. I made a homemade dry rub and homemade bbq sauce to go with it. I smoked it with charcoal and mesquite logs for about 3.5 hrs.
