Small update.Found an ancient looking Medallion branded speedo with a range of 50Mph which is close to perfect for my boat.

It was badly yellowed on the mechanism housing, but the visible partshave not faded, it will probably be the oldest part of my boat but tested ok with a garden hose and new pitot.

Going to try and mount the pitot using marine adhesive.

Interesting that there is no consensus on the best approach for competition.

My wife has a lot to learn about throttle and trim control before I need to worry about that level of accuracy though.

There was no consensus because all you asked for was a meter with a certain speed range. Now that you've been more specific we can make better recommendations.
