Start with the engine anti-cavitation/ventilation plate at the apex of the Vee if you can get it that low (transom height varies from brand to brand). If you have a Force engine use the top mounting holes in the engine mounting clamps or brackets. that way you can raise the engine 1 inch without re-drilling the bolt holes.
See what kind of holding you get in rather sharp turns. If you have power trim and it ventilates like crazy at the cruise trim setting, leave it there. If it ventilates only a little, try raising it the inch since some amount of ventilation in turns can be controlled by tucking trim in.
