Need a receipe for Meatloaf (Update in 1st post)

Thought I would be kind tomorrow to the wife and fix supper. Haven't had any meatloaf for awhile and I don't care much for the mrs receipe. So what is your suggestions? Thanks..........SS<br /><br />Thanks for all of them. Tried Bassy's and it was great. Didn't make the whole batch, but sized it down. Keeper my dog didn't like it cause he didn't get even a taste. That is unusual. :p That is the first time we have ever had it with oats. <br /><br />She was surprised when she got home. I had dinner done, kitchen all cleaned up, and did up the dishes afterwards. I haven't done dishes at the house since,,,,,,,,,,,,oh boy,,I never have. :D <br /><br />Thanks again, I'm gonna try to make it a practice to do this for her at least once or twice a month. Yeah yeah yeah, I know,,I should do it more than that :D ........SS eating good in the neighborhood! :D

What type of meatloaf do you like? With a lot of filling? No Filling? With spices? Without?<br /><br />One of my favorites is filled meatloaf. Prepare a dry bread filling - with some celery and season to taste. Cover the bottom of a baking pan with enough cream of mushroom soup tp just cover the bottom. Press the filling into the bottom of the pan. Cover the filling with a hamburg, salt, pepper, and egg mixture (about 1 egg per each half pound of burger to help hold it together). Press the burger together. Cover mixture with cream of mushroom soup, cover and bake in oven. Add enough water while baking to keep meatloaf from burning.

Cream of mushroom huh? I might have to try that Art.That sounds quite different than what we have here.<br /> Generally I will dice up onions and bellpeppers. I nuke them in the microwave for about a minute to presoften them. I mix them in with about 1 1/2 pounds of LEAN ham meat. I salt, pepper, and garlic powder this to the same amount as you would anything else, you know how much it takes for you. Add a couple of scrambled eggs (uncooked of course!) and a can (8 oz) of tomato sauce. Mix well and form it into the pan. I then take another can tomato sauce and mix a little Italian seasoning into it. With this mixture I pour it over the top of the loaf. Cook it about an hour or so at 325 and it should be good to go. I do like to drain the grease of as it hurts me pretty bad. Even with LEAN meat it still comes out as a lot of grease. With reg ham meat for soups, chili, spagetti, etc I actually rinse with water when its done cooking to get the grease out. It hurts me that bad.

Ken, my wife's recipe and yours are a lot alike.<br /><br />1.5 lbs of hamburger<br />1 fine chopped medium sized onion<br />1/4 fine chopped green bell pepper<br />1 package of dried french onion soup mix<br />1 egg<br />1/2 cup of oatmeal<br />1 tablespoon of worchestire sauce<br /><br />Mix all ingredients together, form and place in baking pan or dish, cover with ketchup.<br /><br />My wife places 1/2 cut bread slices along side the meat in the pan on all sides to help soak up the excess fat drippings. These taste good by themselves when it is done.<br /> <br />Bake in oven at 325 degrees for 1 hour.<br /><br /><br />There's one good thing I can say about my wife's cooking...<br /><br /><br />It broke the dog from beggin' at the table!!! :D

I've used the oatmeal and bread crumbs before, even used croutons once. I don't think it changes the taste much, but it does make it go a little farther. My wife gets a little upset if I put those in now so I just delete them from my process. I might have to try the soup mix sometime too, it sounds pretty good.

Mom's recipe- Hard to mess up<br />2 lb. hamburger<br />1 1/2 cup oats(quick)<br />2 eggs<br />1 tsp. salt<br />1 tsp. pepper<br />1 onion chopped<br />1 can Snappee Tom(if you can't find that use spicy V8)<br />Mix and bake at 350 for 1 hour<br /><br />Real easy and moist.<br />Bassy

My wife always adds about 1/4 cup of ketchup to her ground chuck, then garlic pepper spice blend,an egg,EDIT: Ritz cracker crumbs,large diced peppers and onions,then smears ketchup on top and bakes at 350* for an hour or so. The ketchup keeps it very moist. My wife hates ketchup but after baking the ketchup taste is gone. I've had lots of meatloaf but hers is the one I like best.

My wife has tried on occasion to bake the loaf in an iron skillet.It always turned out dried and burnt. I explained to her, "Honey, they call it meatloaf, not meatskillet. Try a loaf pan next time." And no, I didn't get hit upside the head with the skillet. :D :D

T2F, I thought my wife was the only one that made it in a skillet? Yep, dried out, burnt, bland tasting (god I hope she doesn't read this) and the dog won't even look at it. Other than meatloaf, she is a great cook. Its the only woman that has managed to get me to gain weight. (or it was the middleage spread thingy going on).

I use corn flakes instead of bread crumbs. Just smash them up in to small bits. Then ketchup, mustard, a couple of eggs, salt, chopped peppers and onions.<br /><br />Never exactly the same twice, always good.

I make this in large batches, cook and freeze it.<br />It thaws out and reheats nicely. It is a recipe that is designed to store well.<br /><br />3 Tbs unsalted butter<br />3/4 cup yellow onion, chopped<br />3/4 cup celery with leaves, chopped<br />1/2 cup carrots, peeled and finely chopped<br />1/4 cup fresh parsley, chopped<br />4 cloves garlic, minced<br />2 eggs lightly beaten<br />1/2 cup light cream<br />1/2 cup ketchup<br />1/2 tsp. gound nutmeg<br />1/2 tsp. dried thyme<br />1/2 tsp. dried marjoram<br />1/4 tsp. salt<br />1 tsp. black pepper, freshly ground<br />2 lbs lean ground beef<br />1/2 lb. ground veal<br />1/2 lb. ground pork<br />3/4 cup plain bread crumbs<br />1 Tbs Worcestershire sauce<br />1/2 cup tomato sauce<br />3 slices thick bacon<br /><br />Preheat oven to 375. Coat a large rectangular backing dish with cooking spary. IN a heavy skillet over medium heat, melt the butter and saute the onion, celery, carrots, parsley and garlic, until softened and the moisture has evaportated, about 10 minutes. Remove from the heat and set aside to cool.<br /><br />In a large bowl, shisk together the eggs, cream, ketchup, nutmeg, thyme, marjoram, salt and pepper.<br />To the egg mixture, add the meats, bread crumbs and cooled vegetables, mixing throughly with a wooden spoon or ;your nads. Form the misture into a large loaf and place in the baking dish. Mix the WOrcestershire sauce into the tomato sauce and spoon over the top of the meatloaf. Place the bacon slices lengthwise over the tomato sauce.<br /><br />Place teh pan on the middle rack ikn the oven and bake for 45 minuets. Remove from teh oven, loosely cover and allow to rest for 15 minutes before slicing.<br /><br />The only thing I do differetly with this recipe is substitute mild breakfast sausage for the ground pork and veal. <br /><br />A cheat for the carrots is to buy the shreadded carrots used for salads and chop them up.<br /><br />This recipe came with a Seal-a-meal machine I got some time ago. Like I said, it tastes pretty good and freezes well.<br /><br /><br />Bon Appetite'

I like to wrap strips of bacon around the loaf before it goes in the oven.....then when done you have a nice crispy bacony shell.<br /><br />I like BBQ sauce as a topper

Ok here's mine<br />1 lb good hamburger<br />1 lb sausage (JC Poter)(Jimmy Dean)(good whatever brand)<br />1 onion chopped<br />2 ribs of celery chopped<br />2 sleeves crackers (unsalted) crumbled<br />2 eggs<br />pepper to taste<br />pre heat oven to 375* mix all very well, place in a loaf pan (or make patties and grill), top with a good layer of ketchup (catchup) 1/4" thick or so. Bake until ketchup turns dark, about 45 minutes. Ketchup must turn dark but not burn! Have a crowed and no budget, add more crackers!<br /><br />you can make patties and bake them for sandwiches also.<br />Want it spicy, add red pepper flakes.
