Appreciate all the volunteers, but, I have a feelin' once we dig in, the jars won't last very long............. Yep, very much like herring except the texture is different. Pike is more firm.

and herring is an oily fish, northern is not.

just clean and rinse well

There used to be ALLOT of pickled Northern's here ......... and Canadians too....... until the BWI laws..... most of the bars closed down ;)

Hardtack! Yum! Ever make an open face sandwich with one?
Both hot and cold! Salt cured ham or honeybaked are at the top of the list. Though my favorite way to eat is just with a very generous slathering of REAL butter.
