I was at a buddy's house today that is rebuilding a boat similar to mine. For fuel tanks he has installed 3-6 gallon fuel tanks under the floor where there is a door that he can remove and take them all out. I kinda like that idea as you can just pull them out of the boat. Its under a wood ski-locker type compartment in the center of the boat. If one empties he can just hook up the 2nd then the 3rd. I like that idea. I might just do that myself. The only thing i see wrong with it is venting but where he has em its underneath one of those wood plank like sections of his floor. There is gaps there where air can freely move in and out. and the water can still drain to the bilge cause they are not V shaped tanks just the standard portable type tanks. Why cant i do that? I wouldnt mind switching the line once and a whyle whyle under way.

as long as it is vented i see no problem. although gas fumes are heavier than air so it will settle into the bilge. but, trailering would blow it all out.

You cannot do that safely on an I/O or inboard, but it is likely OK on an outboard-powered boat. Watch out for smoking cigarette/cigar ash and butts and electrical wiring fires.
