I wired everything via a main power switch and circuit breaker with each individual circuit after that also having their own switch and circuit breaker for their circuit. That way I can operate anything even with the engine (key) turn off. But then I can turn everything off via the main power switch. In other words, the key ignition switch only operates the engine and nothing more.
Yes, that does mean some one can turn on the main power switch and have everything running but not the engine. But since I don't leave my boat alone or out-of-sight when trailering, No problem for me! But each person has to wire like they want. JMHO
