Wow Thanks guys almost ready to start cooking plus yes we do use lots of horseradish yummmmm.
Will update the roast and how it comes out.
GA, yes would like the recipe for the New Years roast Thanks again can always count on you guys for getting boat to cook across the water or cooking a roast....:joyous:

I'll grab it as soon as the Admiral finishes with it. She is applying the Coup De'gras to that big hunk o'meat before it hits the oven. And I'll get her horseradish sauce recipe too, they go hand in hand. Hope you like garlic too.

It's in the oven and my nose is twitching like a dawg on the trail of a rabbit. Here goes - Straight from the Admiral's iboats galley! Enjoy!!

Majestic Standing Rib Roast


1 standing rib roast
Lots of thinly sliced garlic cloves
Course or Kosher salt
Freshly ground pepper

Pre-heat oven to 450?

While the oven is heating:

Stick the roast all over with a paring knife, about 1 1/2" deep.
Put a slice of garlic in each slit. We use just about a whole head of garlic, 12-14 cloves. We like the flavor, adjust to your taste.
Rub the roast wih the salt and pepper
Place the roast on a rack in a shallow roasting pan.

Roast for 25 minutes at 450?.
Reduce heat to 350? and continue roasting until an instant read thermometer registers 135-140? - Medium, about 1 3/4 hours. Again adjust to your taste.

Rest the roast for 15 minutes before carving.

Serve with Horseradish Cream Sauce.


Horseradish Cream Sauce

3/4 cup heavy whipping cream
1/2 cup mayonnaise
1/2 cup prepared horseradish, drained
2 tablespoons Dijon mustard
Pinch of sugar
Salt/Pepper to taste.

Whip the heavy cream until soft peaks form.


In a separate bowl, combine mayo, horseradish, mustard and sugar.
Fold in the whipped cream.
Add salt and pepper and stir well.
Transfer to a serving dish.

Serve with the Majestic Standing Rib Roast

I had to add a pic of the Majestic Standing Rib Roast to the recipe above. A good recipe needs a picture of the result. :joyous:

Used the 500? oven method on my 3.25 lb boneless prime Rib Eye roast. It was incredible and cooked as advertised. Before and after pictures will follow tomorrow,

GA_Boater, it is that time of the year again and going with your Admirals recipe again cause it was so good last year.

Our's was to even survied Bentley! But he did get the bone with a little extra meat on it...
