I am pulling this 1975 Johnson 85hp off an old boat to put on my boat.
What is the best way to remove these cables, so I can re-install on my boat?
I tried that boats.net site, but couldn't get much info.

Disconnect them at the engine end and then see if you can remove the remote control without disconnecting them at that end. If you do need to disconnect them at the remote, take the lower part of the outer cover off the remote control.

Click the thumbnails, then click again.

At no time should the cables have a bend with a radius less than twelve inches.

Perfect! Thanks you. Fortunately I don't have to remove them from the remote control.
