I finally got our bird into the brine last night. I didn't have a large enough container, so I put it into a couple of thick contractors trash bags and into my deepfryer pot. That should keep any reaction down between the brine and aluminum. <br /><br />Was planning on deepfrying the bird, but we have high winds and blowing snow. So we are going to have to cook the bird inside this year. (in the oven of course) We saw that new house in Oregon where the contractors set on fire with their deepfryer.

Mine is currently 15 degrees from perfect...I also used a butter/corn syrup baste. I will soon know how it taste's but let me tell ya it is the prettiest bird I have ever cooked!! I cannot wait,...dinner is scheduled at 4 to accomadate my wifes sleep, she has to work tonight...It's gonna be a long hour and a half looking at that bird to see if it tast's as good as it looks.

I can tell there is going to be a lot of lip smacking going on shortly. :D <br /><br />Just don't try to rotiss a 23 lb turkey. Mine wouldn't stay anchored on the spit. I've finally had to take it off and put it on a rack on the barbee. I've been fighting it for three hours and let a lot of heat escape in the meantime. :mad:

It was awesome, best turkey I've ever had in my entire life. I'm hooked, I won't do a turkey again without a brine. The color was picture perfect, you could cut it with a fork, like butta, the flavor to die for, and it was hands down, the most moist turkey ever.<br /><br />Thanks so much Boomyal, Link, and the rest you for your suggestions. They are all going in my personal cookbook.<br /><br /> :)

I didn't cook a turkey but I WILL try it. My wifes sister inlaw used a recipe she seen on a cooking show that was also very good. The bird was stuffed with citrus fruit. I may use both the brine and the citrus fruit.

It doesn't stop there LF. Just wait till ya try the turkey salad sandwiches! :eek: <br /><br />I'm going down to get a 13lber to brine and put on the barbeque. I just love the smoked flavor of the brined turkey. Especially for those TSS's. <br /><br />Yesterday I had to abort my rotiss/bbq bird as at 23lbs I could not keep it on the spit and it was too big just to set it on the grill. I had to do 3/4's of the cooking by finishing it off in the oven. It was still fabulous but lacked that smokey flavor.
