Tough Shrimp

Here's how to make salt-toughened shrimp that you can use whenever you want. Small storage and from what I read, the longer you leave on the boat, tougher they get. The Article says that as these cure, the outside gets tough, the inside holds the smell for a good while.

1.Buy shrimp that are intact with heads and antennas (live or bait well). Spread them on newspaper and gently pat them dry with toweling. Turn them over and do the same thing.

2.Change the newspaper and air dry them for an hour.

3.In a large zipper-seal bag, cover the shrimp with lots of salt and refrigerate overnight.

4.Next Morning, remove the shrimp and discard the salt. Spread the shrimp on more newspaper. Pat dry both sides. Let air dry a half hour and cover with lots of dry salt in another bag. .No need to refrigerate. Three weeks is the usual curing time but you can fish them sooner.

5.Three days will make them so tough they will be ready for action.

6.The longer you keep them, the tougher they get and they will be almost odor-free.
