I saw one of these toe rings pulled off when overloaded ;)

300 pounds, if that was the rating you would not be pulling anything! I would find another dealer with someone who has any idea what they are talking about. Tow ropes for tubes are rated in thousands of pounds. I have a rope rated for just over 4000 pounds. I have never seen a tow ring pulled out nor have I seen a rating for a tow ring and I seriously doubt if you could pull it out by towing anything like a normal load. Hell, they make 12 person tubes. I would quit worrying about the rating and start using it.

Uh-Oh, last month I pulled a 28' cuddy in on a short rope (50') attached to my ski hook. towed him a good 2 miles in 1 meter swells with my little 22 footer

You may well have voided your warranty by doing this, if I were you I would report this immediately to the manufacturer!
