I have a 16ft Nitro 60 HP two stroker(fiberglass) but had similar issues. Talked with a prop guy and purchased the same pitch SS with ventilation holes. They cavitate the prop for hole shot improvement. What it does is create prop slip during initial acceleration to get the RPM up in the power curve, then grabs the water and launches you. I now plane in 25 -40 ft vs 75 ft with old prop. Still have the same top speed and WOT RPM. This worked well for me. Talk to a local prop shop to see if this will work for you.
